Online Personal Trainer Lunch Recipes - Quick Mackerel Salad

Shopping & Ingredients List:

250g Smoked Mackerel Fillets, flaked

250g tin Baby New Potatoes, drained & chopped

4 tbsp Mixed Seeds

Celery Sticks, sliced

Spring Onions, sliced

2 handfuls Mixed Salad Leaves

Dressing

Lemon, juice only

1 tsp Clear Honey

1 tsp Dijon Mustard

Method

1. Mix together the dressing ingredients.

2. Toss the dressing through the salad ingredients & serve immediately. Or use for packed lunch by keeping in a fridge until required.
